This mod adds items, mobs, blocks, etc from your suggestions.
Some notable ones are:

Totem of Dying: Hold it in your hand? Dead.
Hay Golem: Craftable with hay and a carved pumpkin. Needs to be tamed with hay for it to listen to you. Drops wheat seeds when attacked and throws wheat at attacking mobs.
Pineapple and Banana crops: Exactly what they sound like
Omelettes of Sniffer, Chicken, Turtle and Dragon: Each is different, some give you special potion effects!
Bull: Attacks you, takes less knockback, has a tail... Don't try milking it though
Skeleton Knight: Adds a new set of armor and a new weapon (the Iron Claymore) Can only be obtained from this skeleton's drops.
Villager Profession: Miner (spawns with a small mining outpost sometimes in the world, profession block is "Budding Deepslate Ore" trades food, emeralds, resources for tools and other items)
Moai: Dig inside its head to get the Summoner Block, which when right clicked with an emerald will spawn the Moai Villager (you may have to refill it if it loses its emerald) which trades Gold items for Emerald items. Be careful to not give it the wrong items though!
Blobfish: Spawns in Warm Oceans, can be killed and eaten. Can also be bucketed.
