This is not an exhaustive list but a few highlights:
Gardeners should enjoy Agricraft and growing their own resources as well as the added impact of Dynamic Trees and watching the forests grow.
For techies, there is Immersive engineering and a few add-ons like immersive tech and immersive petroleum. Build some extensive machinery and power it all with a variety of sources.
For magic, this modpack offers Thaumcraft.
The modpack is also offering The Aether II, a hostile paradise set in the clouds ripe for adventuring and exploration.
