You start of with chosing an origin you like wich adds new stuff you can do such as breath under water or always have an elytra but it comes with drawbacks. (you can also just be human)
Vampirism and Werewolfs become a werewolf adds new dangers to the game that can transform you in monsterus ways, it also adds new ways to interact with villages, bioms, a menu witch can be acesed by pressing P and some spooky decoration.
Create you are probobly familear with but if you are not here is a explanation, Create adds new thechnological stuff to minecraft that can be complicated but dos´nt need to be.
